Niches are terms or keyword phrases that are searched often in google, but don’t have a lot of sites competing to rank in google. One example of this is cosmetic contacts. This specific phrase is searched 3600 times per month on average, and there is relatively little competition. Once you find a niche that you are going to use, you build a simple blog based around that and several other similar terms that you have some chance of ranking for. With the right links and content you will eventually get to first spot in google for those specific terms, and then you will be able to monetize the site.
